TASTING NOTES
Using only the finest fruit from select blocks at our Highbow Hill Vineyard, this wine has concentrated berry fruit flavours and fine tannin.
SEASON
2015 was a strong vintage in the Yarra Valley. Mild conditions in spring allowed excellent fruit set and yields were good. Continuing cool and mild conditions promoted good flavour development balanced with fine acid. It was generally dry and disease pressure was low. Our Yarra Valley Pinot Noir harvest began in late February.
WINEMAKING
This is a single vineyard, single clone wine (MV6). The fruit was destemmed and cold soaked before fermentation by wild yeasts in open fermenters. The ferments were hand plunged twice daily. The wine was matured in French oak barriques, about 40% new, for 10 months.
One of Australia’s premier cool climate wine regions, the Yarra Valley encompasses such diverse topography that it can produce premium quality fruit in a range of grape varieties.
With its stunning hills and dales ranged before a backdrop of blue mountains, elevations vary greatly. The climate is Mediterranean with a maritime influence from Port Phillips.
These rare single vineyard wines are only released in the finest vintages as the best of the best from our carefully managed vineyards.
The labels each feature a collection of objects from the vineyard the wine was grown.
The landscape of Highbow Hill Vineyard features established vines planted on rolling hills. Eucalyptus and gum trees are widespread with a diverse range of soils ranging from sandy loam to yellow clays.
