ORIGINHighbow Hill Vineyard, Yarra Valley, Victoria, Australia. Located near Dixon’s Creek in the Yarra Valley, Highbow Hill invites consumers into a clear understanding of what the Yarra Valley floor has to offer. The vineyard blocks are nestled amongst the hill offering a variation in vineyard aspect and micro-climate to provide diversity and complexity in the fruit that is grown there. Grown on sandy loam over clay, there is concentration and plushness in the fruit.
CRAFTING & AGEINGAll fruit was hand-harvested when flavour, acid and tannin were in perfect harmony. The fruit was hand-sorted allowing only the best bunches to be used in the winemaking. Whole-berries were cold-soaked before starting natural fermentation. Pressed off when tannin and concentration was at its finest, it was then aged in 20% new French oak for 10 months. The structural and the savoury nature of this wine shines through which is credit to the sustainable management of Highbow Hill Vineyard.
AROMA & PALATE This intensely perfumed wine draws you in with classic lower Yarra Valley aromatics of crushed red berries and sweet potpourri. The fleshy, powerful and detailed palate is vibrant and full of red currants, dark red cherry, blood orange and rhubarb with beautifully integrated oak and fine chewy tannin carrying the wine to a long and persistent finish.
