Auricchio Pecorino Pepato
Pecorino Pepato is a pure sheep's milk cheese from Sicily that is flavored with whole black peppercorns, also from Sicily. The milk is lightly salty and less sheepy in the younger versions while the aged are saltier, spicier and much more granular. This version is aged for about 3-4 months and is lightly salty with the characteristic spicy taste due to the peppercorns.
