THE FINER DETAILS
Mons Roquefort
Mons Roquefort has been specially selected for its rich, moist texture and lingering, mild sweet-salty finish. Cultivated the old fashioned way on wood-fired rye bread which is dried to a fine powder and then sprinkled on the young curds. After careful maturation, the soft ivory-textured cheese is veined with blue mould. It is made traditionally from the finest quality raw sheep’s milk and contains unique blue mould strains that have been cultivated the old fashioned way
ORIGIN: Aveyron, France
SUB CATEGORY: Blue
Moscato works well with a number of cheeses, but our pick is classic Roquefort. The delicate effervescence of the wine works well with the rich creamy texture pairing the blue cheese spice with the honey and apricot notes in the wine.
